Better-for-You Chocolate Ganache Cake

A decadently chocolatey pepperminty cake that's actually healthy? Seriously - this deliciously healthy cake creation from Chef Dan Churchill is a dream come true. Makes 12 servings.

Ingredients

Cake: 

  1. 2 ½ cups almond flour 
  2. 1 tbsp cornstarch 
  3. 2 tbsp cacao powder 
  4. 1 tsp baking powder
  5. ¼ tsp salt
  6. 1 cup White Chocolate Peppermint Super Coffee
  7. ⅓ cup olive oil 
  8. ¼ cup maple syrup 
  9. 1 egg 

Ganache:

  1. 1 tsp maple syrup 
  2. 2 tbsp cacao powder 
  3. ⅓ cup White Chocolate Peppermint Super Coffee

Instructions

  1. Preheat the oven to 350F.
  2. In a bowl, mix almond flour, cornstarch, cacao powder, baking powder, and salt. 
  3. Add Super Coffee, olive oil, maple syrup, and egg. Mix.
  4. Transfer to a baking mold and cook for 35 minutes at 350F. 
  5. For the ganache, mix the cacao powder, maple syrup, and Super Coffee in a bowl. Pour on top of the cooled cake.
