These low carb/low sugar waffles are delicious, wonderfully crispy on the outside, and fluffy on the inside. Ready in just 15 minutes, and made with simple ingredients... you won’t want waffles any other way! Makes 6 waffles, serving size: 2 waffles.
Ingredients
WAFFLES
- 3 eggs
- 4 oz cream cheese
- ½ cup almond flour
- 2 tablespoons coconut flour
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1 tablespoon zero calorie granulated sweetener
- 1 teaspoon baking powder
- 3 tablespoons Sweet Cream Super Coffee
TOPPING
- 3 tablespoons plain Greek yogurt
- 1 tablespoon Sweet Cream Super Creamer
- ½ cup frozen mixed berries
Instructions
- Preheat the waffle iron on medium-low heat.
- Add all the waffle ingredients into a blender. Blend until smooth.
- Grease the waffle iron with cooking spray or butter
- Scoop the batter onto the waffle maker. Let cook for about 2-2.5 minutes or until golden and crispy. Repeat until all the batter is finished.
- To make the cream topping, mix the Greek yogurt and Sweet Cream Super Creamer together in a small bowl.
- Warm the frozen berries up in the microwave in 30 second intervals, until the berries are soft and start to release juice.
- Top the waffles with the cream topping and warm berries.
