Pumpkin Spice Snickerdoodles

Ingredients

Cookies

  • 1 & 1/2 cups almond flour
  • 1/2 teaspoon baking powder
  • 1 tsp cream of tartar
  • 1/4 cup salted butter, at room temperature
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla exract
  • 1 egg
  • 1/4 cup zero calorie granulated sweetener of choice
  • 2 tbsp Pumpkin Pie Latte Super Coffee

Pumpkin Spice Sugar Coating

  • 3 tbsp pumpkin pie spice
  • 3 tbsp zero calorie granulated sweetener of choice

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a baking sheet with parchment paper; set aside.
  3. In a large bowl, beat together the butter, pumpkin puree, vanilla extract, egg, granulated sweetener, and pumpkin pie latte until fully combined.
  4. Then, add in the almond flour, baking powder, and cream of tartar. Use a wooden spoon to fully incorporate until a dough forms.
  5. In a small bowl, mix together the pumpkin pie spice and granulated sweetener for the coating, and place on the prepared baking sheet. Repeat with all of the dough.
  6. Place the baking sheet in the fridge for 30 mins.
  7. Then, remove from the fridge and bake the cookies for 12-13 mins.
  8. Allow to cool for 10 mins, then transfer to a cooling rack.
