Pumpkin Spice Snickerdoodles

Ingredients
Cookies
- 1 & 1/2 cups almond flour
- 1/2 teaspoon baking powder
- 1 tsp cream of tartar
- 1/4 cup salted butter, at room temperature
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla exract
- 1 egg
- 1/4 cup zero calorie granulated sweetener of choice
- 2 tbsp Pumpkin Pie Latte Super Coffee
Pumpkin Spice Sugar Coating
- 3 tbsp pumpkin pie spice
- 3 tbsp zero calorie granulated sweetener of choice
Instructions
- Preheat the oven to 350 degrees.
- Line a baking sheet with parchment paper; set aside.
- In a large bowl, beat together the butter, pumpkin puree, vanilla extract, egg, granulated sweetener, and pumpkin pie latte until fully combined.
- Then, add in the almond flour, baking powder, and cream of tartar. Use a wooden spoon to fully incorporate until a dough forms.
- In a small bowl, mix together the pumpkin pie spice and granulated sweetener for the coating, and place on the prepared baking sheet. Repeat with all of the dough.
- Place the baking sheet in the fridge for 30 mins.
- Then, remove from the fridge and bake the cookies for 12-13 mins.
- Allow to cool for 10 mins, then transfer to a cooling rack.
