Blueberry Baked Donuts

We created a healthier version of the classic baked treat featuring Blueberry Muffin Super Coffee or French Vanilla Super Coffee! This recipe is gluten-free, paleo, and dairy-free. Makes 12 donuts.
Ingredients
- 2 cups almond flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ cup coconut oil, melted
- ¼ cup maple syrup
- 2 egg whites
- ½ cup Blueberry Muffin Super Coffee
- 1 teaspoon vanilla extract
- ¼ cup fresh blueberries
Optional Glaze:
- 2 Tbsp Coconut Oil, melted
- 2 Tbsp Maple Syrup
- 1 tbsp Blueberry Juice
Or
- 2 tbsp Powdered Sugar
- 2 tbsp Blueberry Latte Super Coffee
- 1 tbsp Blueberry Juice
Garnish with fresh lemon zest.
Instructions
- Preheat the oven to 350 F. Spray a donut pan with nonstick cooking spray.
- Combine almond flour, baking powder and baking soda.
- Add coconut oil, maple syrup, egg whites, Blueberry Muffin Super Coffee, and vanilla.
- Fold in fresh blueberries.
- Fill each donut mold about ¾ of the way full. Bake for 17 minutes.
- Remove from the oven and allow to cool on a wire rack. Makes 12 donuts.
