Low Carb, High Protein Blueberry Basque Cheesecake

Cheesecake is one of our all-time favorite desserts due to it's ultra-rich and creamy flavor - it's totally indulgent! But most recipes call for tons of sugar. For those of us who still want the delicious things in life without all the sugar, this recipe is the perfect solution. Try this low-carb, low-sugar, and high-protein blueberry cheesecake that definitely delivers on rich & creamy flavor! This recipe is also gluten-free.

The Recipe

Low Carb, High Protein Blueberry Basque Cheesecake

  • Cook Time: 3 hours

For those of us who still want the delicious things in life without all the sugar, this recipe is the perfect solution. Try this low-carb, low-sugar, and high-protein blueberry cheesecake that definitely delivers on rich & creamy flavor!

Ingredients

CHEESECAKE

  • 3 eggs
  • 1 cup zero calorie sweetener (erythritol)
  • 2 cups Greek yogurt (fat free, 2%, or whole milk)
  • 4 oz cream cheese, at room temperature
  • 3 tbsp Blueberry Muffin Super Coffee
  • 1 tsp vanilla extract
  • 1/3 cup coconut flour
  • 2 ¾ tbsp cornstarch
  • Zest of 1 lemon
  • 1 cup fresh blueberries

TOPPING:

  • ¼ cup warm blueberries
  • Zero calorie powdered sugar

Instructions

  1. Preheat your oven to 350F. Line a baking dish with parchment paper and set aside. (It is ok if the parchment paper folds, creating the Basque look.)
  2. Separate the egg whites from the yolks. 
  3. Mix the yolks, sweetener, vanilla, yogurt, cream cheese, Blueberry Muffin Super Coffee, and vanilla together in a small bowl until smooth.
  4. Beat the egg white in a medium bowl until fluffy. Then, fold the egg whites into the yogurt mixture.
  5. Add the coconut flour and cornstarch and mix until fully combined.
  6. Fold in the lemon zest and blueberries.
  7. Pour the cheesecake batter into the prepared baking dish and bake for 30-35 minutes, or until set and golden brown around the edges and on top. 
  8. Place in the fridge for at least 3 hours.
  9. Top with warm blueberries and powdered sugar if desired.
