The Recipe

Blueberry Energy Bites

  • Prep Time: 5 minutes
  • Cook Time: 70 minutes

Have a delicious midday pick-me-up with these healthy Blueberry Energy Bites featuring Blueberry Muffin Super Coffee or French Vanilla Super Coffee! This recipe is gluten-free, vegan, and dairy-free. Makes about 12 energy bites.

Ingredients

  1. 1 cup oats
  2. 1 cup shredded coconut, plus ¼ cup for garnish
  3. ⅓ cup milled flax seed
  4. ⅓ cup raw pumpkin seeds
  5. ⅓ cup dried blueberries 
  6. ⅓ cup tahini
  7. ¾ cup Blueberry Muffin Super Coffee 
  8. ⅓ Maple Syrup
  9. ½ teaspoon vanilla extract

Instructions

  1. Mix all of the ingredients together and chill in the refrigerator for an hour. 
  2. Roll into 1oz bite sized pieces. Garnish with additional shredded coconut. 
  3. Store covered in the fridge.
