They’re perfectly sweet, light, fluffy, and filled with cinnamon flavor and an ingredient list you can feel good about - these indulgent pancakes make a better-for-you breakfast that’s still totally crave-worthy!

Our low sugar, high protein, gluten free pancakes with cream cheese glaze make a better-for-you breakfast that’s still totally crave-worthy. Makes 8 pancakes, serving size 2 pancakes.
Ingredients
PANCAKE BATTER
- 1/2 cup coconut flour
- 2 tbsp zero calorie powdered sugar (confectioners swerve)
- 1/4 tsp salt
- 1 tsp baking powder
- 3 large eggs
- 1/4 cup plain Greek yogurt
- 1/2 cup Cinnamon Roll Super Coffee
- 1/4 cup almond milk
- 1/4 tsp vanilla extract
- 1 tsp cinnamon
- A little bit of coconut oil, for the pan
CINNAMON SWIRL
- 1-2 tbsp coconut butter
- 1 tsp cinnamon
- 1 tsp Sweet Cream Super Creamer or 1 tsp almond milk mixed with 1/2 tsp stevia
CREAM CHEESE GLAZE
- 1/4 cup cream cheese, softened
- 1 tbsp zero calorie powdered sugar
- 1 tbsp Sweet Cream Super Creamer or 1 tbsp almond milk mixed with 1 tsp stevia
- 1/4 tsp vanilla extract
Instructions
- Mix all ingredients for the pancake batter in a blender.
- In a small mixing bowl, mix together the ingredients for the cinnamon swirl. Place the cinnamon roll swirl mix into a small baggie and snip off the corner with scissors once ready to use.
- Melt a little bit of coconut oil in a non-stick pan over medium heat, enough to lightly cover the pan.
- Drop 1/4 cup of the pancake batter onto the pan. Add the cinnamon swirl.
- Turn the pancake over once the top starts to firm and bubble, roughly 2 minutes. Cook the side with the swirl for another 30 seconds to 1 minute. Repeat until the batter is gone.
- To make the cream cheese frosting, mix the cream cheese, zero calorie sweetener, liquid of choice, and vanilla extract. Set aside.
- Plate the pancakes and drizzle the cream cheese glaze on top. Enjoy!
