So, we whipped up a better-for-you pancake recipe featuring our Maple Pumpkin Super Creamer that’ll satisfy all your pumpkin desires and leave you still feeling your best!
With just a few ingredients, these pumpkin pancakes make an easy addition to your weekend brunch spread.

Maple Pumpkin Pancakes

- Total Time: 15 minutes
Spice up your weekend brunch with these better-for-you pumpkin pancakes! With just a few ingredients, they make the perfect healthy fall treat. Makes 2 servings.
Ingredients
- ¾ cup almond flour
- 1 tsp baking powder
- 2 eggs, beaten
- 2 tbs butter, plus 1 tbs for cooking
- ¾ cup Maple Pumpkin Super Creamer
Instructions
- Combine almond flour and baking powder.
- In a separate bowl, combine eggs, butter, and Maple Pumpkin Super Creamer.
- Mix the flour mixture with the egg mixture.
- Pour a fourth of the pancake batter into a buttered skillet on medium heat. Repeat for 4 pancakes.
- Flip pancakes after approximately 4 minutes.
- Top with butter and your favorite syrup. Maybe a sprinkle of pumpkin pie spice too! Enjoy!
