Featuring White Chocolate Peppermint Super Coffee, this recipe is low sugar, low carb, and keto friendly.

No Bake Keto Holiday Cookies

PSA: holiday cookies don’t have to cause a sugar crash! Try this super easy no-bake recipe that’s big on holiday cheer with none of the unhealthy sugar. Makes 12 cookies.
Ingredients
- ½ cup almond flour
- 2 ½ cup shredded coconut, unsweetened
- ½ cup White Chocolate Peppermint Super Coffee
- ⅓ cup coconut oil
- ½ cup Lily’s no sugar added dark chocolate morsels
- ¼ cup sugar free crushed peppermints
Instructions
- Combine the almond flour, shredded coconut, White Chocolate Peppermint Super Coffee, and coconut oil in a bowl, mixing to form a dough.
- Roll dough into balls, approximately one tablespoon each, and place on a parchment lined tray. Flatten the balls of dough slightly, then mark a crosshatch pattern on the surface with the tines of a fork. Place in the freezer for 15 minutes.
- In a bowl, melt the dark chocolate morsels in the microwave for approximately 30-45 seconds. Dip half of each cookie into the dark chocolate, then dip in crushed peppermints.
